Cancer cells become resistant to traditional oncology treatments as they have the ability to strengthen over time. Consequently, they have the ability to multiply and lead to re-occurrence of the cancer long after declared remissions from chemotherapy or radiation.

According to a recent study from Penn State which used baked potatoes for the purpose of the study, anthocyanins cause apoptosis of cancer cells, even of stem cells.

The researchers involved in this study used extracts from baked potatoes in both in vitro and in vivo studies, reaching a conclusion that baked purple potatoes have a positive impact on tumor growths.

“You might want to compare cancer stem cells to roots of the weeds,” said Penn State Jairam K.P. Vanamala. “You may cut the weed, but as long as the roots are still there, the weeds will keep growing back and, likewise, if the cancer stem cells are still present, the cancer can still grow and spread.”

Purple potatoes derive from Peru and they are not spread worldwide yet. Therefore, Monsanto is still not interested in genetically modifying them, meaning that health food stores offer organic purple potatoes. These potatoes are small in size, so the best way to cook is them is to boil and mash them with organic butter and sea salt.

You can also prepare a potato salad, which goes great with some homemade mayonnaise or healthy version without soy or canola oil.

Purple potatoes are not the only source of anthocyanins. Other purple-colored fruits and veggies are also rich in this compound, such as dark tart cherries or plums. Needless to say, you should eat them raw.

What About the Starches?

There a type of starch called resistant, a type that is not quickly digested to create sugar. It disappears when exposed to high temperatures, but it comes back after it cools down.  This resistant starch can be found in potato salads, from both white and purple potatoes, peas, and pastas.

Purple potatoes are high in resistant starch. This type of starch contains chlorogenic acid, a strong antioxidant and tumor fighter. The highest concentration of this acid is found in raw starchy food or those which are cooked and then cooled.

According to Janine Higgins, a food researcher at University of Colorado School of Medicine,

“Resistant starch is found in peas, beans and other legumes, green bananas, and also in cooked and cooled starchy products like sushi rice and pasta salad. You have to consume it at room temperate or below — as soon as you heat it, the resistant starch is gone. But consumed correctly, it appears to kill pre-cancerous cells in the bowel.”

Any part of purple potatoes is edible and beneficial when it comes to preventing cancer.  For optimal results, it is recommended to consume a purple potato salad with a few tart cherries on the top!
